Turkey Meatball Stew Slow Cooker


Carrots, celery, potatoes and meatballs with a delicious broth, prepared in the Crockpot! A perfect meal for a chilly night!
 


 


 




 


 


 

You guys, it is so SO hard to eat healthy this time of year. Even more depressing when you have baby weight to work off. Ugh!
 


 

I am proud of myself, though. I've been paying for a gym membership for the past year and a half. I think I went a grand total of 5 times. Then in February I realized I was pregnant, and there went that motivation! I was too sick and tired to even attempt working out in those early months. And when I finally felt better, it hurt to walk long distances because I was so big!
 


 

I'm proud to say for the past three weeks I've gone to the gym at least twice per week – that is a HUGE deal for me, you guys! I'm trying really hard to make this a habit for me. Not only will I be able to lose this baby weight, I feel SO much better when I take time and go. I even rewarded myself with a new workout outfit (cheap-o on Black Friday) and a new pair of sneakers – it's the little things that keep me motivated, ha!
 


 


 




 


 


 

My favorite healthy dinner will pretty much always be soup. You can pump soups and stews FULL with healthy vegetables and high protein meats and for some reason when you slow cook it all together, it comes out tasting fantastic! Now for this Slow Cooker Meatball Stew, I used frozen turkey meatballs, but feel free to use your favorite brand.
 


 


 




 


 


 

This stew was incredibly filling and delicious, one bowl did it for me and we had a good amount of leftovers for lunch the next day, too!

Roasted Vegetable Chili
 




 


  • 3 potatoes peeled and diced
  • 3 stalks celery diced
  • 3 carrots peeled and diced
  • 12 oz package frozen meatballs
  • 10.75 oz can tomato soup
  • 10.5 oz can beef gravy
  • 1 cup beef broth
  • 1.35 oz packet onion soup mix
  • Place potatoes, celery, carrots, and frozen meatballs into Crockpot. In a medium bowl, whisk together remaining ingredients. Pour into Crockpot. Cook on low 8 hours or on high 4 hours.
